RECIPE: Delicata, Gorgonzola, & Everything Nutkrack Salad

Everything Nutkrack is great on its own, but we highly recommend keeping it in your pantry to add even more savory deliciousness to your favorite recipes. This salad is full of warm fall veggies and topped with a bright lemony dressing and Everything pecans to hit all the taste buds. Sub your favorite veggies or cheeses--you do you! 


Salad:
1 delicata squash
2-3 large kale leaves, stemmed and roughly chopped
1 15 oz can garbanzo beans
⅛ cup crumbled gorgonzola cheese
¼ cup Everything Nutkrack, coarsely chopped 
1 ½ tbsp olive oil, divided
1 tsp salt
½ tsp pepper


Dressing: 
2 tbsp olive oil
Juice of 1 lemon
2 tsp red wine vinegar (or a vinegar of your choice)
1 tsp salt 
½ tsp pepper

Directions:
  1. Make the dressing: combine olive oil, lemon juice, vinegar, salt, and pepper in a small mason jar. Shake well and place in the refrigerator until ready to serve.
  2. Preheat oven to 425 F. 
  3. Cut delicata squash in half lengthwise, remove stem, and scoop out seeds. Cut halves horizontally, about a half inch thick (they should resemble half moon shapes). 
  4. Toss squash with 1 tbsp olive oil, salt, and pepper and spread on a baking sheet.
  5. Bake squash for 20-30 minutes, turning over halfway through.
  6. Let squash cool on a plate, but keep the oven heated. 
  7. Spread garbanzo beans and kale onto the same baking sheet. Toss with ½ tbsp olive oil and season with salt. 
  8. Bake for 5-10 minutes until the kale is just starting to get crispy and the beans are slightly dried out. 
  9.  Remove from oven and let cool for a few minutes on baking sheet. 
  10. Combine squash, kale, garbanzo beans, gorgonzola, and Nutkrack in a large bowl and gently mix. 
  11. Serve on plates and drizzle with refrigerated dressing (reshake dressing before pouring). 
  12. Season with salt and pepper (or more Everything!), as desired. 
  13. Enjoy!
