RECIPE: Nutkrack Noodle Bowl

Change up your lunch or dinner routine with this healthy noodle bowl, featuring Nutkrack's classic sweet and salty pecans. Make it your own by adding any of your favorite vegetables or flavors. 

Ingredients
¼ cup Nutkrack Classic pecans, coarsely chopped
2 cups of cooked Soba noodles (a packet of Ramen works well too!)
1 cup pomegranate seeds
½ cup romaine lettuce, shredded
½ cup carrots,  julienned or shredded 
2 Tbsp. fresh mint, thinly sliced
¾ cup pecan curry dressing  (recipe below) 

Pecan Curry Dressing
1 Tbsp. sesame oil
2 tsp. salt
1 tsp. pepper
2 Tbsp. sliced garlic
2 Tbsp. sliced ginger
2 tsp. sugar
2 Tbsp. rice wine vinegar
7 oz. can coconut milk (half of a 14 oz can)
1 Tbsp. soy sauce
3 Tbsp. lime juice
1 Tbsp. Sriracha (or to taste)
¼ cup Nutkrack classic pecans, coarsely chopped

Instructions
Pecan Curry Dressing:
  1. Heat sesame oil in a small sauce pan or skillet over medium heat. Add garlic, ginger, salt, and pepper and cook for 2 minutes until aromatic.
  2. Add the sugar, red wine vinegar, coconut milk, soy sauce, and bring to a simmer. Cook for 10 minutes. 
  3. Add lime juice, Sriracha, and Nutkrack pecan pieces and mix well. 

Noodle Bowl: 

  1. Combine all ingredients except shredded romaine. Mix in a large bowl until well incorporated. Add dressing and toss gently until thoroughly coated.
  2. Place in serving bowl and garnish with romaine.
