RECIPE: Maple Nutkrack Granola
Candied pecans are super delicious on their own, and we all know Nutkrack takes candied pecans to a whole new level. That said, we have another secret weapon here at Nutkrack HQ: a world class chef! Along with his James Beard Award-winning restaurant career and his time running state of the art culinary programs at Sub-Zero/Wolf and Epic Systems, Chef Eric has been making Nutkrack and using it in recipes for more than 15 years. Maple Nutkrack Granola
Makes about 2 pounds
1 c. maple syrup
1/4 c. brown sugar
3/4 c. sunflower or safflower oil
6 cups rolled oats (may use gluten free oats to keep the recipe gluten free)
1/2 c. flax seeds (golden or brown both work equally well)
4 ounces Nutkrack, chopped just a little (may leave whole if preferred)
Pre-heat oven to 300 degrees F.
Mix maple syrup, brown sugar, oil, and salt together, getting any lumps of brown sugar dissolved.
In a larger bowl, combine the oats and flax seeds, and with your hands mix in the wet mixture until thoroughly combined. Spread out onto to baking sheet pans lined with parchment paper and place in oven. Allow to bake for 30 minutes, remove from oven and turn granola over with a spatula. Return to oven for another 35 minutes.
Remove from oven and allow to COMPLETELY cool. Add Nutkrack and store in an airtight container.
