3 easy & nutritious Nutkrack snack recipes!

That statistic is completely made up :) …but we’ve all been experienced the irritability and delirium that comes from being hungry. Treat the “hanger” with these easy and healthy snack recipes, perfect for taking on the go–to the office, in the car, after a workout, or on a hike. Nutkrack is naturally vegan, gluten free, and keto-friendly

Overnight Oats

Gluten free and vegan (if using vegan yogurt)
Makes 1 serving

Breakfast is a VERY important meal of the day. But you don’t have to worry about making it in the morning… you can make it the night before! It also makes a great mid-morning or afternoon snack.

Ingredients: 

  • ½ cup old fashioned oats
  • ⅛ cup oat milk
  • 2 tsp plain Greek yogurt (or a vegan yogurt)
  • 2 tsp maple syrup
  • 1 tsp chia seeds
  • 1 tsp cinnamon
  • ⅛ cup Nutkrack, coarsely chopped

Directions:

  1. Pour oats into a pint size glass mason jar.
  2. Add remaining ingredients (expect Nutkrack). Stir with a spoon, then cover and shake well for 10 seconds. 
  3. Let sit overnight in the refrigerator. 
  4. Serve in a bowl or chow directly from the mason jar!
  5. Sprinkle with chopped Nutkrack and enjoy! 

Veggie Dip

Gluten free and vegan (if using vegan yogurt)
Makes about 2-3 servings

This tangy yogurt dip features Everything Seasoned Nutkrack! It will give your carrots, celery, and cucumbers more flavor while the Nutkrack will bring the crunch. You can also use it to dip your crackers, pretzels, or whatever the heck you want! Double the batch and store in an airtight container in the fridge to enjoy all week, or store in multiple containers for taking on the go!

Ingredients:

  • ½ cup plain Greek yogurt (or a vegan yogurt)
  • 1 ½ tbsp fresh dill, chopped
  • 1 tbsp vinegar
  • 1 tsp onion powder
  • 1 tsp salt 
  • ½ tsp pepper
  • ½ cup Everything Seasoned Nutkrack, chopped 

Directions:

  1. Combine all ingredients together in a small bowl and mix well. 
  2. Taste and add more seasonings, as necessary.
  3. Enjoy immediately or store in airtight container(s) in the refrigerator for up to one week.

No Bake Granola Bars

Gluten free and vegan (if using vegan dark chocolate)
Makes 10 classic rectangle granola bars or 20 smaller squares

No baking is required for these tasty and filling granola bars! Swap in your favorite ingredients and make your own masterpiece :).  These bars freeze well, which means they’ll be ready (with a quick thaw) whenever you need a snack!

Ingredients:

  • 1 cup nut butter of your choice
  • ½  cup maple syrup
  • 2 cups rolled oats
  • 1 cup rice krispies
  • ½ cup Nutkrack, coarsely chopped
  • ¾ cup dried fruit (cherries, craisins, or raisins), loosely packed
  • ½ cup dark chocolate chips (optional), coarsely chopped 
  • 2 tbsp chia seeds (optional)
  • 2 tbsp flax seeds (optional)

Directions:

  1. In a large bowl, mix nut butter and maple syrup until combined.
  2. Add the remaining ingredients and mix well until fully incorporated. If mixture is too dry and not sticking together, add more nut butter or about ⅛ cup coconut oil. 
  3. Scoop mixture out into a parchment paper-lined 8x8 baking dish and pat down firmly with your hands. (A 9x13 dish will also work, the bars will just be thinner).
  4. Place the baking dish in the fridge for 1-2 hours. They will firm up as they cool. 
  5. Slice bars into any size and shape you like!
  6. These will freeze well in a sealed bag or container for up to 6 months.
